Bake-off Guide

Description Temp. Time Steam Directions
1 Small Rolls 210°c 3-5 minutes Yes Place evenly and bake on wire tray. Ensure damper is closed prior to baking then open damper with 2 minutes of baking remaining
2 Pumpkin, Sunflower Rolls 200°c 4-6 minutes No Place evenly and bake on wire tray.
3 Demi Sandwich Carrier 200°c 10-12 minutes Yes Place evenly and bake on wire tray. Ensure damper is closed prior to baking, then open damper with 4 minutes of baking remaining
4 Baguettes 200°c 12-15 minutes Yes Place evenly and bake on wire tray. Ensure damper is closed prior to baking, then open damper with 5 minutes of baking remaining
5 Ciabatta Large 200°c 15-25 minutes Yes Place evenly and bake on wire tray. Ensure damper is closed prior to baking, then open damper with 5 minutes of baking remaining
6 Flavoured Breads 180°c 20-25 minutes Yes Place evenly and bake on wire tray. Ensure damper is closed prior to baking then open damper with 5 minutes of baking remaining
7 Heavier Rye Breads 150°c 30-40 minutes No Bake on wire trays with products evenly spaced.
8 Puff Choux Pastries 200°c 25-30 minutes No Prepare these products as desired, then bake on a solid tray with a baking sheet/paper
9 Danish Pastry /Viennoiserie 170°c 18-22 minutes Yes Place Danish/Viennoiserie on solid flat trays with baking sheet/paper and allow to stand for 10 minutes if possible before baking. Tray up product with a generous space to allow for even baking and air flow around the products. Ensure the damper/vent is closed prior to bake and then opened with 5 minutes of baking time remaining. Finish with glaze or as desired.
10 Croque Monsieur / Pizza 180°c 15-20 minutes No Evenly space products and bake on wire trays.
11 Purepie 170°c 40-45 minutes No Egg or Milk wash and bake on solid tray with baking sheet/paper from frozen.
12 Quickbake Thaw n serve 200°c 2-4 minutes No Allow to thaw completley or if required bake as guideline.
13 Thaw & Serve Thaw n serve Allow to thaw completley at room temperature between 10 minutes and two hours, dependant on product density.
